As part of the initiative of the Gemeente Amsterdam, we are taking part in Waste-free week - 09-15/09! This waste-free workshop steps into the more advanced side of fermentation, showing you how vegetable scraps can go a very long way and create amazing, long-lasting flavours. This includes making Koji, a type of fermentation that allows you to make things such as soy sauce, miso, sake, amazake, and other delicacies!
